Hi all I'm using a Vodafone dongle AND an Orange Iphone (bluetooth connection) to connect to the interweb... If both are connected, do both send/receive, how do I monitor which is sending receiving? etc...? Many thanks in advance...

There may be some better options from the mac experts in the forum, but you may find "Menu Meters" helpful. It's a free open source tool that enables you to monitor, amongst other things, your network connections. You can configure it to show a graph for the network connection you're interested in, so that should let you know which connection is actually being used.
Not for the faint-hearted, but if you start up a console (in applications, utilities), you could do an ifconfig command, followed by a netstat -r and you may be able to work our which interface is being used. (Actually there's a Network Utility application in the same place that gives you the same info.)
It could be random, but I suspect the order in which you connect the dongle and bluetooth will impact which connection is actually used.
