To kick things off, here are the applications I find myself using more than any others.
"Dock" items: Safari Firefox (for those websites that don't work with Safari) Mail Vienna iTunes iPhoto Pages Skype iCal iBank Path Finder Parallels Desktop (for the rare occasions I need a Windows OS)
"Menu Bar" items: Remote Buddy Menu Meters MagiCal

I am a relatively new switcher so "most used" is still in it's infancy. You will notice a distinct lack of some standard-comes-with-osx-apps; i'll be honest I don't see the appeal of safari, ical and mail are useless to me as I only have 1 mac and two pc's so prefer online gmail/gcal, I don't have that many friends/aquaintances that require use of address book; use outlook at work of course :-(,
So, on with my list:
"Dock" items
quicksilver flock textmate itunes iphoto imovie transmission vlc neooffice skype adium colloquy cocoazip cyberduck preview (does that count, suppose so if you have reader installed and go to preview instead)
menubar items
gmail notifier
PS - I am still heavily reliant on M$ Money on pc but hadn't heard of iBank; with quicken for mac no more, may well give that a shot.

I use Mail for my Gmail and .Mac mail. I like it but can understand how a web-based mail app is better if you are using non-Mac machines. Yes, Preview counts. I use that too - a lot! MS Money is the only app that I miss now that I am on a Mac. When it comes to Mac financial apps, iBank is the one I like the most but it is no way as as good as MS Money for the PC. I have Adium installed but don't have enough friends using IM to warrant using it.

I posted the "quicken for mac no more" comment as I am sure I heard on macbreak weekly that they were making a loss on quicken for mac 2007 and were going to discontinue it, but I can't seem to find an announcement or anyone talking about this, hmm, curious, I must be going mad (although UK version is no more of course).
Has anyone tried liquid ledger??
I use Adium for my family down south who can just about grasp MS Messenger on an XP machine.

I tend mostly to use the standard apps that come with OS X.

I'm just downloading Pathfinder from Mike's list now, its looks a very interesting method of file management. BarryJ21 has some unusual research tools, TeX Shop and Bibdesk. And I'm also downloading Witch from Tones, I can never get to grips with expose and all that!
Apart from iTunes, Mail, Safari and the usual suspects I would like to add these to the list:
WireTap Pro Notebook (from Circus Ponies) Mike introduced me to MagiCal and I use it all the time now If Monks had Macs (as featured in Episode 55) Scrivener (a writers tool) Java Psion Link (for my old PDA) GrandPerspective (graphically view your hard disc to see what files are taking up all the space)

i get the most usage out of adium (chat, chat, chat) firefox (always surfing teh net) thunderbird (stays open as long as my mini is on) desktop manager (startup item - virtual desktops) jetclock (startup item - i love this little app) magical (startup item) quicksilver (obvious main menu (maintenance every weekend)

As a note as to why I should use web mail rather than a mail client. Mail will force GMail into the Folder model, rather than the Tagging model, with both IMAP and POP3. Also, as I use around 6 different computers, it means I can have access to my information anywhere.

Heres my dock: Finder, Firefox, Safari, Mail, MSN Messenger, iChat, Colloquy (IRC), Sys Prefs, NewsFire and Skitch. Gimp is sometimes there as well.
