I should know this but does anyone know how I swap from American to English in the global dictionary?

step by step (based on a clean install of OSX 10.5)......
First off to change spell checking to British English
Open the International Preference Pane in system preferences.
This will probably open by default to the Languages options window (if it doesn't then click the Languages buttons at the top of the window).
The window has a list of languages on the left hand side (this list is used to decide which language(s) are used automatically and in what order of preference). By default the list will probably have English at the top of the list (this is actually American English - or as they call it international English).
If the list has British English and Canadian English included in it make sure they are moved to the top of the list. If the list doesn't have British English and Canadian English included then click on the Edit List ... button. This will open a pop up window containing a number of languages - find British English and Canadian English and click the tick box style button next to them.
This should set British English as the default for spell checking, etc.
(if you want to make sure this has worked then open TextEdit.app, make sure spell check as you type is enabled and type color and colour to see which one is underlined as miss spelled).
Now for the phonetic squiggles of words looked up in dictionary.app
Open Dictionary.app (several ways of doing this - I find the easiest is to click on Finder > Services > Look up in dictionary).
Open Dictionary.app's preferences (Dictionary > Preferences)
make sure that the pronunciation settings are set to British English (IPA)
