Have any of our iPad users hooked it up to a projector yet? Does it only work in Keynote, or could I use it to "read" books from iBooks on screen? This is something I often want to do in church - mainly children's books with beautiful pictures.

I have briefly tried and proved that it works with the old component adapter. I've got keynote, so will have a look.
Video output is completely dependent on the application (unless you use a jail-broken iPad together with a utility that pipes all the video output to the external video, but that's not available to non-jail-broken devices yet).

Yes, as expected keynote works fine. Also has a built-in laser-pointer (you press and hold on the ipad, and the red light comes up on the vga output).
I haven't found a way to get video out using iBooks, but GoodReader with the latest update now supports it. So if your books are in pdf format you could use this.
