In mail next to the reply icon there is an icon that has an arrow pointing into a box. It moves the email somewhere, but where? This is a Google mail account if that helps?

I think it puts the Email into the archive (i.e. deletes it in normal parlance, but GMail calls this archiving).
I know that the iOS 4.2 UI is clever enough to change the "Delete" button to an "Archive" button (the button that is revealed when you swipe across an item in the mail list) when the mail account is a Google mail account, so maybe it is also clever enough to contextually change the normal waste basket icon into that "put it into the archive box" icon when it detects that the mail account is a Google Mail account?

I have just had a look too, it's amazing what one learns from this excellent forum. I found that on touching the icon described a message "tap on a mailbox to move this message" pops up as well as a list of mailboxes. When touching any one of these eg Sent Items, the email jumps across and in to the box. Very satisfying and quite useful too.
