They are. Or at least, I use Candybar to change them. I've spent a fair bit of time searching out and changing icons to ones I like more than the defaults.
I can knock together a Candybar container of my favourites if you want?

here you go and you can get the postage stamp by following the instructions I posted elsewhere... Download this file. Open Finder, go to /applications and right click on mail.app, select 'Show Package Contents. You'll get a new finder window with 'Contents' Go into there, go into the Resources directory and copy the file you downloaded above into it. You will get prompted to replace the existing file. You may also get asked for your password. After that I'd suggest you run Disk Utility and repair the permissions. Reboot. Job done. I recommend doing it this way rather than using something like Candybar because I've had problems changing certain system application icons with Candybar and this is a method which is guaranteed to work. If you have Mail living in the dock, you may just need to drag it out before you reboot and copy it back after you've bounced your Mac.

Great thread! Here's mine... Click britishmac.com/desktop.jpg for big! It took me a little while to figure out how to do this. Use the Grab application (applications/utilities folder) to get your desktop picture. I uploaded two images big and small to britishmac or you could use free image online hosting such as Skitch. Then copy the url and when posting click the picture icon in the Add Tags section of your forum message to display the image and put the url in between the the two [] [], or use the the globe icon to paste a link. Use the Grab application (applications/utilities folder) to get your desktop picture. Grab is one way to do it, but it's easier than that, young Will. Take a picture of the whole screen ⌘-Shift-3 Take a picture of part of the screen ⌘-Shift-4, and then drag the crosshair pointer to select the area. To cancel, press Escape There's plenty more. Look up "shortcuts for taking pictures of the screen" in Mac Help. The resulting file will appear on your desktop, and is usually a PNG unless you are one of the Jobs Faithful who are given the secret codes to change the output file format.
