Ladies,
Every time I connect my iPhone to the iMac, iPhoto loads up. Is there a way to stop this from happening for the iPhone while still allowing it when I connect my "propper" cameras?

As far as I can see there is no easy way to do what you want. However it can be done. This person has come up with a cunning plan. So cunning that you could put ears on it and call it a weasel.

I did this by accident. I installed aperture which opened when I plugged in the iphone. I then uninstalled it and bingo, no more annoying opening!!
I realise this is a long way to do it!

On normal iPods, there's a setting you can change when it's connected. Try this: Connect your iPhone, and once iTunes has loaded, click the iPhone in Devices on the left hand side. In the summary tab, uncheck Open iTunes when this iPod is connected. That ought to do it. Or I need new specs. You mean iPhoto, not iTunes. D'oh! Okay, Applications > Image Capture. Preferences > When a camera is connected, open "No Application" This means you'll have to launch iPhoto after connecting a camera.
