Does anyone know of a way to connect an iPhone to a mac so that the mac can use the GPS receiver? (it probably requires jailbreaking but Im fine with that, ive done it before)

It probably doesn't allow you to do what ever it was you wanted by linking the iPhone and Mac, but there's an outside chance that a combination of the following applications might achieve what you're after...... GPSRecorder (for the iPhone) utilises the gps chip to record a number of waypoints and track where you've been. GPSBabel (for your Mac) allows the waypoint tracking data from GPSRecorder to be converted for use with mapping applications (ie Google Earth). houdahGPS (also for your Mac) provides a nicer front end / user interface for GPSBabel. ..... however I have a feeling that you wanted to use the gps chip within the iPhone to transmit 'live' info to your Mac (in which case I haven't really helped!!!)
